Augusta Mall

Did I tell you I can now get her hair in Pig tails? How cute is that!?!

Johnny has Fridays off (though he is on call 24/7) so we got to spend the day with him. We went to the mall because we heard the play place was nice. Daphne is always a little tentative when we go to public places. She wants to be able to run around with the other kids, but she is also a little scared of them I think. I thought it was okay, but Johnny thought it smelled like urine, so I don't think I will be taking her back there. Again, I thought the mall was nice, but Johnny kept saying that it was too small. I'm just happy to live in a place that has a mall and Target and Walmart. Then after we explored the town a little we went and got 50% off pizza at Papa John's, YUM.....

It was a pretty good day!!!

Daphne walks!!!


Had to share Daphne walking the other night. She had been doing pretty well before we left, but she seems to be an official "toddler" now.



Grilled Chicken Ceasar Salad





This is my new food obsession. It is so tasty and easy to make. We had it tonight and thought I would share it with you.

Grilled Chicken Ceasar Salad

Ingredients
  • 2 tablespoon(s) fresh lemon juice
  • 2 teaspoon(s) Dijon mustard
  • 1/4 teaspoon(s) Worcestershire sauce
  • 2 tablespoon(s) grated Parmesan, plus more for serving
  • 4 tablespoon(s) olive oil
  •  Kosher salt and pepper
  • 1 medium red onion, cut into 1/4-in.-thick wedges
  • 2  thick slices country bread
  • 4  (6-oz) boneless, skinless chicken breasts
  • 1 small head romaine, sliced crosswise into 1/2-in.-wide strips (about 8 cups)


Directions
  1. Heat grill to medium-high. In a large bowl, whisk together the lemon juice, mustard, Worcestershire, Parmesan, 2 Tbsp oil and 1/4 tsp each salt and pepper; set aside.
  2. Brush the onion with 1 Tbsp oil and season with 1/4 tsp each salt and pepper. Brush the bread with 2 tsp oil. Brush the chicken with the remaining 1 tsp oil and season with 1/2 tsp each salt and pepper.
  3. Grill the chicken and onions until the chicken is cooked through and the onions are just tender, 5 to 6 minutes per side. Grill the bread until toasted and slightly charred, 1 to 2 minutes per side.
  4. Cut the bread into 1-in. pieces. Toss the romaine, onions and bread with the dressing. Serve with the chicken (sliced, if desired) and sprinkle with additional Parmesan, if desired.

Travel and our newest home...

We are here! I've even seen my sweet friend Lisa! We got in on Friday afternoon after a very easy 24 hours of driving. I spent most of the time in the drivers seat, but I prefer it that way because Daphne just screams t me to hold her if I'm not. She did so well on the trip though. We had one dirty night in Fort Smith, Arkansas.(Don't ever stay at the Days Inn there, it is HORRIBLE!) And then one blissful night in Birmingham, Mississippi! We have spent the last couple of days cleaning and getting settled. I promise to post a video of the new place. I have to give the biggest shout out to Liz for letting us stay in there home with all their furniture. We really love it!

Moving on!!!

      
A week from today we are heading to our new home, Georgia. First we are going to Augusta. I am super excited about this because my dear friend Lisa lives there. We will only get to spend 6 weeks there, but I can't wait. Then we are heading to Atlanta for 6 months. We are hoping Johnny can schedule the rest of his rotations there as well so we won't have to move.

On another note Daphne is taking steps. I don't really consider it walking yet since she would still rather crawl than get up on her two feet to get around. The first time she did it I was such a proud mama. I can't believe my little one growing up so fast. Last week I was bored and went through all our pictures since she was born and was amazed at how much she has changed. Its hard to believe how small she was and that she used to be on oxygen. Time goes by to fast.
